Asian Glazed Salmon


Fish for Friday today with a delicious Asian Glazed Salmon!  You can't go wrong with a delicious boneless and skinless Salmon fillet.  I have never been fond of skin on my fish.  To me it is a bit of a turn off, so that is why I really love these boneless and skinless salmon fillets I get from Seafresh



Their fish is so amazing.  I have never had any fish from them that I didn't like.  Its frozen fresh at the source and so it is some of  the freshest fish that you can find.  Their salmon fillets are absolutely gorgeous. Boneless and skinless and individually frozen so that you can take out as many or as few as you want to cook at any given time.


At the moment when those of us who are self isolating are unable to get the shops and home delivery slots are really difficult to get, shopping at online shops like Seafresh is the way to go!  They make it so easy to shop.  Just log on to their easy to use shop, choose what you want, pop it into your cart and then pay.  There is same day dispatch on all orders place before 1 PM, and free delivery on order over £50.  I have been getting fish from them for a while now and I really can't fault them.  Everything has been impeccable, from the ordering, to the packaging, delivery, quality, etc.  And their customer service is examplary.


I love their Salmon fillets.  Being centre cut they are cut from the centre of the fish and not the tail.  This means that they are of a beautiful thickness and are not really "fishy" tasting if that makes sense.  Cuts of salmon closer to the tail have a much stronger flavour, which I am not overly fond of!



They are also sustainably sourced from the cold and clear waters of Scotland and the Faroe Islands.  Their salmon is some of the best I have ever eaten, and I confess, I have eaten a lot of Salmon in my lifetime!


One thing I love about Salmon is that with its slightly stronger flavour it lends itself beautifully to glazes and rubs and one of our favourite glazes is this beautiful Asian one. 


Its sticky and sweet from the use of brown sugar, which mixes very well with salty dark soy sauce.  A bit of lime juice adds some tartness to counteract the sweet.


Even more Asian flavours are injected into the glaze with the use of some Hoisin sauce and ground ginger.  I always have Hoisin sauce in my refrigerator.  For those of you not familiar with it, Hoisin sauce is a lovely thick and fragrant asian sauce which is a beautiful combination of salty and sweet.


This sauce also packs some heat with the use of crushed red chilli flakes and some ground black pepper. You can control how much heat you want or don't want.  I tend to go for less than the recipe calls for myself, although Todd is certainly not adversed to eating food that bites back.


The whole recipe itself is a very easy one.  Fish, I find, is very easy and quick to cook. 


For this you simply make the sauce, which is just a matter of combining the ingredients and bringing them to a boil.  (I like to do it in a measuring cup  in the  microwave.) Once made, the hot sauce is poured over the fish fillets in a baking dish.


The baking dish gets popped into a moderate oven and 12 to 15 minutes later you are rewarded with perfectly cooked and glazed delicious pieces of salmon!!


While it is baking you can cook some rice and a vegetable to enjoy along side, or even a salad if you are couting your carbs.  An asian coleslaw would be lovely!


Today I served it simply with some steamed long grain rise and honey lime carrots.  Just peel, slice and cook some carrots until crispy tender, drain well and then return to the saucepan along with a small knob of butter, some honey, some lime zest and a bit of lime juice, stiring and tossing them together until they are heated through and sweetly glazed.  Terribly yum!

Asian Glazed Salmon

Perfectly cooked boneless, skinless salmon fillets with a sweet and spicy Asian glaze.  This simply delicious.

Ingredients:

  • 4 (4 to 6 ounce) salmon fillets, boneless, skinless, thawed if frozen
  • 100g soft light brown sugar (1/2 cup)
  • 120ml asian soy sauce (1/2 cup)
  • 2 TBS hoisin sauce
  • 2 TBS ground ginger-root
  • 2 tsp red pepper flakes (or to taste)
  • 1 tsp ground black pepper
  • 1 TBS fresh lime juice

Instructions:

How to cook Asian Glazed Salmon

  1. Preheat the oven to 180*C/350*F. fas mark 4.  You will need a glass baking dish large enough to hold the fish fillets in a single layer with some room around each. Spray the dish with non-stick cooking spray.  Place the salmon into the dish in a single layer.
  2. Place all of the remaining ingredients into a glass microwavable safe measure.  Whisk together to combine and then heat in the microwave on high until the  mixture comes to the boil, about 1 1/2 minutes.  Alternately measure the ingredients into a saucepan and cook over moderate heat until the mixture comes to the boil.
  3. Pour the hot glaze over the salmon fillets in the baking dish.
  4. Bake in the preheated oven for 10 to 12 minutes, or until the  fish flakes easily and is just cooked through.
  5. Serve the fish fillets immediately, with some of the glaze spooned over top.

This recipe also lends itself perfectly to cutting in half to serve only two people. This is so tasty that I would serve it to company without blinking an eye.  The ease of preparation, and quick cook time, make it perfect for that, not to mention the beautiful combination of flavours. 


As with any fish dish, quality speaks for itself.  When you are starting with really good fish, you really don't or shouldnt' have to do very much to it to get the best from it.  The Salmon fillets from Seafresh are beautiful. Garlic Butter Salmon & Broccoli for two


I am really excited to share this one pan sheet pan supper for two with you today for Garlic Butter Salmon & Broccoli!  Salmon and broccoli are perfect partners.  So are salmon and garlic! Put the three together and you have a really delicious entree that everyone will love.  It is perfectly sized for two but you can very easily multiply the amounts to serve more!


Best of all th whole thing bakes on one baking sheet, which, if you line it with aluminium foil, makes for a really no fuss no muss supper option!  I did bake some sweet potatoes to have with it as well, which makes this a Triple Super-food Supper option!


Roasting sweet potatoes is so easy. I just wash them well, dry and pop them onto a baking sheet and into a hot oven. They are usually done in about 35 to 40 minutes, depending on their size.  Simply cut in half, scoop out the flesh and mash. Nothing else needed.  They taste fabulous all on their own.  Roasting sweet potatoes in the skin and then mashing them makes for one very tasty side dish!


I used some lovely salmon fillets in the freezer that we had gotten from Seafresh. Their fish is so amazing.  I have never had any fish from them that I didn't like.  Its frozen fresh at the source and so it is the freshest fish that you can find.  Their salmon fillets are absolutely gorgeous. Boneless and skinless and individually frozen so that you can take out as many or as few as you want to cook.


Sourced from the clear cold waters of Scotland and the Farroe Islands, they are centre cuts, cut from the thicker mid-section of the salmon, rather than the tail.  Fish cuts from closer to the tail are a lot "fishier" if you know what I mean.  Stronger in flavour.  I much prefer the higher quality centre cuts.


I always like to wipe my fish and pat it dry with paper towels before I use it.  I didn't need to oil my foil either, as I used Bacofoil which is non-stick.  Just pop those fillets onto the foil lined baking sheet.



A mixture of a small amount of butter, some fresh garlic, a bit of brown sugar and dried herbs makes up the garlic butter.  There is only 3 TBS of butter used between the fish and the vegetables, so spread out that isn't overly bad, plus I did not use any butter in my sweet potatoes.


This is the perfect low carb entree and great for diabetics.  High in fibre, low in carbs and salt. You only add as much salt as you want to add.  There is plenty of garlic herbaciousness going on there that you don't need to use a lot of salt.


Salmon is a favorite choice when it comes to choosing to eat healthy,  because it contains significant amounts of essential omega-3 fatty acids , which support heart and eye health . This heart-healthy fish boasts a boatload of other nutrients, as well.


Broccoli has long been touted as one of the healthiest veggies because of its nutritional makeup. This wonderful vegetable is loaded with fiber, antioxidants to fight cancer, and vitamin C to aid in iron absorption.



Sweet potatoes are loaded with beta-carotene which functions at a powerful anti-oxident as well as being a rich source of Vitamin A.  Put these three things together and you are scoring a "Hat-trick" of some of the best nutrition around! Plus they taste fabulous together. You can't go wrong!

Garlic Butter Salmon & Broccoli for Two

Perfectly baked and flavoured.  Moist and delicious salmon with crispy tender broccoli, all baked together on one baking sheet.

ingredients:

You will need:
  • 2 boneless, skinless, salmon filets
  • 1 small head of broccoli, washed, trimmed and broken into florets (about 2 cups)
For the garlic butter:
  • 2 cloves of garlic, peeled and minced
  • 3 TBS butter, melted
  • 1/2 TBS soft light brown sugar, packed
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • salt and black pepper to taste
  • 1/2 lemon, divided in half

instructions:

How to cook Garlic Butter Salmon & Broccoli for Two

  1. Preheat the oven to 200*C/400*F/gas mark 6. LIne a baking tray with aluminium foil and spray lightly with some non-stick cooking spray. Pat the salmon dry and then arrange on the baking sheet. Scatter the broccoli florets around the salmon on the sheet.
  2. Whisk together the melted butter, brown sugar, oregano, thyme, and rose mary. Drizzle this mixture over the salmon and the vegetables. Take one lemon quarter and squeee it over the fish. Season all to taste with salt and pepper.
  3. Bake in the preheated oven for 12 to 15 minutes until the salmon flakes easily with a fork, and the broccoli is crispy tender.
  4. Divide the salmon and vegetables between two heated dinner plates and serve hot with the remaining lemon for squeezing over top.

NOTES:

If you don't like your broccoli really crispy tender, you can blanche it in some boiling water for 2 minutes before using.

Wild Alaska Salmon & Warm Vegetable Salad



I wanted to share a recipe with you today for a fabulously quick and delicious meal salad for those times when you are a bit short on time, but still wanting to serve something fabulously tasty, nutritious and healthy for your family!  This Wild Alaska Salmon & Warm Vegetable Salad delivers on all three counts.  Not only is it nutritious and healthy, but it is also delicious!



I have used canned Wild Alaska Salmon for this dish. Canned Alaska Salmon is a great store-cupboard ingredient to have on hand for all sorts and it really shines in this quick and easy recipe.

Alaska, which is the 49th State, is located in the very far North West extremity of North America  Sparsely populated it is one of the world's largest seafood exporters.  If it were a country, it would rank as the ninth-largest seafood exporter, by value and seventh in terms of volume. 

Seafood is Alaska's most valuable renewable resource and It is the state's second largest industry behind oil/gas, in terms of generated labour. 

As you can see, commercial fishing and seafood processing are vitally important for rural and coastal communities in the state, which is sparsely populated, accounting for roughly a third of all private sector employment!


In a world where sustainable resourcing of fish is incredibly important seafood from Alaska is not only sustainable, but wild and completely natural. Wild Alaska Salmon & Warm Vegetable Salad

For a healthy, flavour-packed salad that's made in just moments, you can't beat this easy recipe. Its delicious!

ingredients:

  • 1 X (418g) or 2 (213g) cans of  red or pink wild Alaska Salmon (14 3/4 oz or 2 X 7.5 oz)
  • 3 TBS olive oil
  • 2 shallots, peeled and sliced
  • 12 cherry tomatoes, halved
  • 250g (9-oz) roasted peppers in brine, drained
  • 175g (6-oz) grilled artichokes in brine or oil, drained
  • 1 tsp finely grated lemon zest
  • 2 TBS lemon juice
  • 1 tsp wholegrain mustard
  • salt and freshly ground black pepper
  • 1 X bag rocket, watercress, and spinach salad leaves (about 4 cups)

instructions:

How to cook Wild Alaska Salmon & Warm Vegetable Salad

  1. Drain the salmon, discarding the liquid. Remove any skin and bones, if wished, and break the salmon into large chunks with a fork.
  2. Heat 1 TBS of the olive oil in a frying pan and add the shallots. Cook gently for a couple of minutes, then add the cherry tomatoes, peppers and artichokes, tossing them together as they cook for about two minutes, to warm them through.
  3. Whisk together the remaining olive oil, lemon zest, lemon juice and mustard.  Season with salt and pepper.
  4. Share the salad leaves between 4 plates. Gently stir the salmon chunks through the vegetables, and then divide between the plates  Drizzle with the dressing and serve at once.

NOTES:

Cook's Tip:  If you're  not keen on artichokes, use mushrooms instead.

Canned salmon was often on the menu when I was growing up and when I was bringing up my own family.  Not only was it a very convenient store cupboard ingredient, but it was filled with lean, high-quality protein, which as a mum was very important to me.  


Canned Salmon

Canned Salmon from Alaska contains both Sockeye (red salmon) or Pink Salmon.  A 213g can (7.5-oz) contains:

  • 43g of protein
  • 16g Vitamin D
  • 0g Carbohydrates

It is available in two forms: skin & bone included, or skinless and boneless. The benefits of skin & bone salmon are that it falls apart easily and it is full of calcium, which is good for building and maintaining  healthy bones and teeth. A 213g can of skin & bone salmon contains a full 240mg of calcium. It also helps with cardiac muscle protection, weight managemnt, the prevention of kidney stones and dental care. This is a benefit that skinless & boneless cans don't have.

Alaska seafood is widely available in all the major supermarkets in the UK, including Waitrose, Tesco, Sainsbury's, ASDA, Morrisons, Iceland, Aldi and Lidl.

  • Alaska Salmon is found in fillets (chilled and frozen), canned and smoked,
  • Alaska Pollock is sold in frozen fillets by most supermarkets including Ocado and Iceland.
  • Canned Salmon from Alaska is sold by John West, Princes and many own brand labels.

Both wild salmon and pollock can be cooked from frozen.
