Cinnamon Roll Waffles (Easy & from scratch)


The cinnamon rolls I grew up on were not the yeasty kind that you will find in shopping malls, and airport kiosks.  They were quick and easy, from scratch and delicious.  In fact I have always thought they were a bazillion times more delicious than any you can buy.


My mother used to use biscuit dough, slather it with soft butter, sprinkle on cinamon sugar and then roll it up, cutting it into slices and baking them until they were crisp and golden brown.  Easy peasy and done in half an hour.



Sometimes she would add raisins.  There was never any icing.  We didn't mind in the least. These were a rare treat and we treated them as such!


I used to make them for my children also, as a bedtime snack every now and then. They loved them.  I never iced them either.  The idea of icing them never occured to me really.  They loved them just as they were, and I always popped in plenty of raisins and sometimes chopped nuts. Once in a blue moon, maybe chocolate chips.


To this day I prefer these "Quick" bread, biscuit dough, cinnamon rolls more than any other kind. 


We are all staying in now. We are living in perilous times.  Who would have thunk it . . . this life we are living at the moment is the stuff of "disaster movies."  Something which we have enjoyed being enertained by, but never with the concept that it could really happen to us.  If we are waiting for Bruce Willis, Sylvester Stallone or Batman to swoop in and save the day . . .  we are in for a big disappointment.


Somehow when this is actually happening in real life, to the whole world,  and to you  . . .  that takes the fun out of it. It is no longer entertainment.  Its very real and not in the least fun to watch, or experience or even think about. 


We have not been out of our house in four weeks now. And I am sure there are many of you out there experiencing the same.  It stopped being fun on the first day.  If anyone deserves a treat WE do!


These Cinnamon Roll Waffles are a treat that many of us can enjoy, even the cook!  They are simple, quick, easy and delicious.


They are a tasty "riff" on my mother's cinnamon rolls of old.  Baked in an electric waffle iron, until the edges are all moreishly crisp . . . and riddled with the flavour of plenty cinnamon butter


With crisp little dimples, just perfect for hugging that sweet vanilla glaze  . . .


You could of course double the recipe, making an even dozen, but I can promise you that the six are plenty satisfying  . . .  as satisfying a treat that ever was and it won't use up too much of your flour.


Mom used shortening in her dough.  I use butter which makes them incredibly flaky and just rich enough to wake you up in the middle of the night, still thinking about them . . .


These are the perfect treat for young and old alike.  As comfortable with ice cold glasses of milk as they are with hot cuppas . . .


The recipe uses only 1 cup of your precious flour.  (I don't know about you, but my flour has become precious now.)  Not a lot of sugar . . .  and yes butter both in the dough and the filling  . . .


But this is meant to be a treat.  Something to help divert our attention away from what's happening all around us at the moment.  I have stopped listening to the news, except for a brief cursory listen in the morning.  Its wise to stay informed, but not wise to drown in it.


We will get through this to the other end. I have no doubt.  It might take some time, but along the way we can enjoy things like this, which will help to make our days a little bit sweeter.


My waffle baker makes heart shaped waffles.  These waffles were perfect broke into four at their natural creases . . . which made them the perfect size for dunking.

Easy Cinnamon Roll Waffles

Easy Cinnamon Roll Waffles

Golden brown and crusty outside, meltingly tender inside, riddled with cinnamon and sweetly glazed.  What's not to like! You will need an electric waffle iron for these.

Ingredients:

  • 140g plain flour (1 cup)
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 TBS sugar
  • 2 ounces cold butter cut into bits (1/4 cup)
  • 80ml whole milk (1/3 cup)
For the cinnamon filling:
  • 2 ounces butter softened (1/4 cup)
  • 3 TBS sugar
  • 1 TBS ground cinnamon (can use less, it all depends on your love of cinnamon)
For the glaze:
  • 65g icing sugar (1/2 cup)
  • few drops vanilla
  • milk to thin

Instructions:

How to cook Easy Cinnamon Roll Waffles

  1. Whisk the flour, salt, baking powder and sugar together in a bowl. Drop in the shortening and cut it into the flour mixture with two knives or a pastry blender until the mixture resembles coarse crumbs. Add the milk all at once and stur just until the dough forms a ball around the fork. Turn out onto a lightly floured board and knead about 14 times. Roll out to a rectangle about 6 inches wide and 9 inches long, and about 1/3 of an inch thick.
  2. Cream together the butter, sugar and ground cinnamon. Spread this thickly over the rolled out dough to cover. Roll the dough up tightly from one long edge to the other. Using a sharp knife cut into 6 (1 1/2-inch thick) slices crosswise.
  3. Heat your waffle iron. Working with one slice at a time, place the slices into the waffle iron and press down. Leave to bake for 4 to 5 minutes at which time they should be golden brown, crisp on the edges and cooked through. Remove and keep warm while you bake the remainig ones.
  4. To make the glaze, whisk together the icing sugar, vanilla and enough milk to give you a thickish drizzle icing. Drizzle this over the warm waffles. These are fantastic served warm or cold.

NOTE:  An easy way to clean your waffle iron is to take two fairly wet pieces of paper towel and place them into the waffle while it is still fairly hot.  Let it sit while you are enjoying your waffles and then when you are done, it will have steamed anything that might be stuck away from the iron and you can simply wipe them clean.

Cinnamon Swirl Tea Bread Updated for Christmas


One thing I like to bake every Christmas is my Cinnamon Swirl Tea Bread. It is a recipe I got from my good friend Leona many years ago, and it is delicious!  Normally I just bake it plain, but during the Holidays I like to dress it up with a glaze!


Its incredibly moist and buttery and goes down very well with a hot cup of whatever floats your boat.  Tea, coffee, herbal infusions, hot cocoa . . .


The rich batter contains butter and sour cream, which helps to make it incredibly moist.  This is one of those breads that just gets better with each day that passes.


Tea Breads are called Tea Breads because they are delicious served with cups of tea, not because they are made with tea.  The same way breakfast coffee cakes are not really made with coffee but meant to be enjoyed with hot coffee . . .


This delicious loaf has a lovely cinnamon flavour  . . .  both in the swirl which uses lots of soft light brown sugar and ground cinnamon  . . .


And in that sweet sticky glaze.


The swirl comes from layering in the cinnamon brown sugar mixture and then swirling it with a round bladed knife.  Try not to overdo it with the swirl, you want it to be distinct and if you work too hard at it, it will be absorbed into the bread instead of giving you a swirl . . . 


Sometimes it ends up a bit more swirly than others. You can never tell what its going to be until you cut the cooled bread open.  No matter where the cinnamon ends up, one thing is for sure.  This is fabulously delicious!

Cinnamon Swirl Tea Bread

Yield: Makes 1 loaf

Terrifically tasty.  Moist, yummy and oh so cinnamony!

ingredients:

  • 115g butter, softened (1/2 cup)
  • 2 large free range eggs
  • 120g  of sour cream or plain yogurt (1 cup)
  • 2 tsp vanilla extract
  • 190g caster sugar (1 cup)
  • 280g plain flour (2 cups)
  • 1/2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • pinch salt
  • 6 TBS soft light brown sugar, packed
  • 2 TBS ground cinnamon
  • dash ground cardamom
Optional Glaze:
  • 65g icing sugar, sifted (1/2 cup)
  • milk to thin
  • pinch ground cinnamon

instructions:

How to cook Cinnamon Swirl Tea Bread

  1. Preheat the oven to 180*C/350*F/ gas mark 4. Butter a 9 by 5 inch loaf tin and line with baking paper. Set aside.
  2. Measure the butter, eggs, sour cream, vanilla, sugar, flour, soda, baking powder and salt into a bowl. Beat together until well combined, but do not over beat. Stir together the brown sugar, cinnamon and cardamom.
  3. Spread half of the batter into the prepared baking tin. Sprinkle with half of the cinnamon sugar mixture. Spread the remaining batter over top. Sprinkle with the remaining cinnamon sugar. Using a round bladed knife gently cut through the batter to swirl the cinnamon sugar through.
  4. Bake for 55 to 60 minutes until well risen and a toothpick inserted into the centre comes out clean. Cool in the tin for 10 minutes before removing to a wire rack to finish cooling completely. Store wrapped tightly in cling film. Serve cut in slices, toasted or not, and spread with butter.
  5. To make the optional glaze, whisk the icing sugar and cinnamon together with just enough milk to give you a drizzle icing.  Flick it over the top decoratively.

This also makes wonderful gifts for neighbours and friends.  Bake, wrap well and freeze, then take out on the day, glaze and then let the glaze set, pop it onto a giftable bread board, wrap with some cellophane and tie it with a red ribbon.  I have never had anyone throw it back!

Cinnamon Toast Cake


This is a cake recipe I have been eye-balling for quite some time now.  It closely resembles other cake recipes that I have seen, called Cinnamon Flop Cake, Amish Cinnamon Cake, etc.  I have tried a few of those and they didn't turn out very well, which is why I have waited so long to bake this one.



With no eggs and not a lot of fat . . .  I  had my reservations about it . . . but the photo in the cookbook looked really good . . .


It comes from this cookery book, written by Mary Younkin, creater of Barefeet in The Kitchen.com.  You can also find her recipe, with pics, here. Its a great blog and this is a fabulous cookbook.


It looks really good and I think you will realise why I wanted to bake it.  I love Cinnamon and I adore Cinnamon Toast.  Today I decided to take a chance and I baked it.



This has to be one of the easiest cakes I have ever baked.  It uses things I always have in the house and there are gluten free options for people who can't do gluten.



The cake itself is quite moist and flavourful.  No eggs needed . . . say what!  Yep no eggs . . .  and only 2 TBS butter.  So relatively low fat.


Just look at the lovely texture.  I served it plain with a hot drink. 



But sliced fruit would go really well with it.  She shows it with sliced strawberries.  I am thinking that any crushed berries would go well, or sliced peaches, pears, etc.



You bake the cake first and then when it is almost done, you pour a butter/cinnamon/sugar mixture over top and bake it for ten minutes longer  . . . 



The result of that is a crisp cinnamon sugar coating . . .  almost like a cinnamon creme brulee topping . . .


Ohhh, I just had a thought, this would be excellent during strawberry season along with crushed berries and a dollop of whipped cream . . .  will be doing this again then for sure! 



In the meantime we have enjoyed it just as it is  . . .  plain . . .


Todd enjoyed a nice big piece of it with a hot cup of vanilla tea . . . 



Actually I had cut this piece originally for him to enjoy. I was going to just have a tiny taste . . .


Just a tiny smidgen so I could write about it . . . 



However it was so good that I ended up eating half the square of cake before I knew it and then had to cut him another piece.  Yes, it IS that good!

Cinnamon Toast Cake

prep time: 10 minscook time: 35 minstotal time: 45 mins
This is a lovely moist cake with a cinnamon toast crunch that bakes on top. There are no eggs, and there are gluten-free options. Adapted from a recipe from the Weeknight Dinner Cook Book by Mary Younkin.

ingredients:

  • 280g plain flour (2 cups)
  • 190g sugar (1 cup)
  • 2 tsp baking powder
  • 1 tsp salt
  • 240ml milk (1 cup), room temperature
  • 1 tsp vanilla extract
  • 2 TBS butter, melted and cooled to room temperature
For the Topping:
  • 120g butter, melted (1/2 cup)
  • 95g sugar (1/2 cup)
  • 1 TBS ground cinnamon

    instructions:

    1. Preheat the oven to 180*C/350*F/ gas mark 4.  Butter a 9 inch square baking tin really well.  Set aside.
    2. Whisk together the flour, sugar, baking powder,  and salt.   Whisk together the  milk, vanilla and melted butter. Add to the dry ingredients and beat together until smooth. Pour into the buttered tin and bake for 25 minutes.
    3. While the cake is baking stir together the topping ingredients until smooth.
    4. Remove the cake from the oven after 25 minutes and pour the cinnamon mixture evenly over top of the cake.  Return to the oven for an additional 10 minutes.
    5. Gluten-free sub for flour:
    6. 185g brown rice flour (1 1/4 cups)
    7. 65g tapioca starch (1/2 cup)
    8. 45g potato starch (1/4 cup)

    Oh, yes, I am pretty naughty when it comes to cake. Its a real weakness of mine.  I really have no willpower when a cake is involved . . .  mores the pity.  Bon Weekend!
