Lemon Sandwiches with Blueberries & Cream


We are enjoying a day filled with dark clouds and plenty of rain today. We can't complain really. May was a beautiful month, but we do need rain.  Rain is a part and parcel of why this country is so lush and green! Admittedly things were starting to turn brown, and I don't like that!


With everything that is going on though, rain can be a bit depressing. With the virus, the lockdown, the riots, etc. we needed a bit of a pick-me-up, so I decided to treat us to a bit of a dessert. Lemon Sandwiches with Blueberries & Cream.


And what a fabulous dessert it is.  Thick slices of a moist and delicious lemon cake are topped with a rich yogurt cream and a sweet fresh blueberry sauce . . . 


Topped with another thick slice of that gorgeous cake and then dusted with some icing sugar.  Beautifully delicious.


That cake is light and lemony. You could enjoy just the cake on its own with along with a nice hot cuppa  .  .  . and trust me, we will be doing just that.


It is moist and tender and as light as an angel's wings  . . .  that cream filling is a lush mix of whipped cream and thick greek yogurt, with just enough tang to provide a brilliant cool contrast to the sweetness of the cake  . . .



Then there is the berry portion. Oh sure, you could just put some fresh berries in the middle and nothing else  . . .  but stir them together with a bit of blueberry jam that has been loosened with a bit of lemon juice and   . . .  wow, just WOW!


Of course if you are not fond of blueberries, you could use strawberries, or raspberries.  Maybe even sliced canned peaches.  All would be pretty wonderful.


The recipe calls for a pretty long loaf tin, which I did not have.  Instead I used a 10 by 3 inch loaf tin as well as an 8 by 3 inch tin.  They were perfectly baked in about ten minutes less than the recipe states.


The recipe is one I adapted from one of my favourite cookery books, Apples for Jam by Tess Kiros.  I love her books.


All of her recipes turn out wonderfully and are simple and in their simplicity quite delicious. I have never had one fail me yet.


I have all of her books. There was only one that I really didn't care for much, the Portugese one. Piri Piri Starfish. I gave that one away, but Apples for Jam, Falling Cloudberries . . .  exquisite!

Lemon Sandwiches with Blueberries & Cream

A basic lemon cake, which is great just as a cake, but put slices together in paird, with some tangy yogurt cream and sweet blueberries sandwiched in the middle and you have a company worthy dessert worth sharing!

Ingredients:

For the cake:
  • 250g butter softened, (9 ounces or  1 cup +1TBS)
  • 280g caster sugar (1 1/4 cups superfine sugar)
  • 3 large free range eggs
  • 310g plain flour (2 1/2 cups)
  • 1 1/2 tsp baking powder
  • the finely grated zest and juice of one unwaxed lemon
  • 185ml of single pouring cream (3/4 cup)
  • 1 tsp pure vanilla extract
To fill and finish:
  • 100ml double cream (3 1/2 fluid ounces)
  • 2 tsp icing sugar
  • 100ml thick greek yogurt (7 TBS)
  • 100g fresh blueberries (3 1/2 ounces)
  • 3 TBS blueberry jam
  • 1 tsp lemon juice
  • icig sugar to dust the cake

Instructions:

  1. Preheat the oven to 170*C/325*F/gas mark3.  Butter a 12 by 4 inch loaf tin really well and dust with flour.  Shake out any excess flour. Alternately you can line it with baking paper.
  2. Cream the butter and sugar together until light and fluffy.  Beat in the lemon zest, lemon juice and vanilla. Beat in the eggs, one at a time.  Sift the flour and baking powder together with a pinch of salt.  Whisk into the creamed mixture alternately with the cream, until you have lovely smooth batter.  Spoon the batter into the prepared pan.
  3. Bake for one hour and ten minutes until a skewer poked into the centre comes out clean. Leave to cool in the pan completely.
  4. To make the filling. Whisk the jam together with the lemon juice to loosen.  Fold in the fresh berries. Set aside to macerate.
  5. Whip the cream with the icing sugar until soft peaks form.  Fold in the yogurt.
  6. Cut the cake into 1/2 inch thick slices and sandwich together with a dollop of the cream/yogurt mixture and a nice spoonful of the berries. Dust the top with icing sugar and serve.

Hmmm . . .  I was just on Amazon going through reviews on my cookbook and found this:

Intellectual property rights are real. I did not order this book to support a blogger who cannot even attribute ownership of recipes. I returned it asap. This is not common knowledge for making ganche- these are special and unique recipes that real chefs made up. Buy this book to support thief. 
 
DUH??? I beg to differ.  Somebody is being very mean-spirited here. There isn't even a recipe for ganache in the book?  Add to that the fact that my publisher hasn't even been able to print a hard copy since last summer due to their loss of a printing company, it is highly unlikely that this person even bought a copy, let alone returned it right away. Why are people so mean? I spent years working on that book. It was a labor of love for me. Anyone who reads my blog knows I always attribute recipes that I use from other's . And as far as Ganache goes, anyone who has been to culinary school knows how to make it. It is a pretty basic recipe that every student is taught.  This is about the time that someone started marking all of my recipe posts on my facebook page as Spam. I think I know who that was now.  Sigh  . . .

Blueberry & Lemon Sheet Pan Pancake


 Pancakes were not something we had very often when I was growing up. We had them once a year, for supper, on Shrove Tuesday.  They were a real treat.  My mother had a huge round griddle pan tha she had gotten with her Wear Ever Aluminium Cookware set. 


She would stand there ladling pancakes onto it a few at a time, until they were all cooked.  I imagine it was a bit of a chore as the griddle pan was bowed in the middle and I can remember it turning around on the burner whenever I used it.  I am sure she found it quite annoying. I know I did.


The only other pan she had for frying in was a small 10-inch frying pan that came from the same set. The set of pots and pans was bought the first year they got married, in 1954.  It was still being used when she passed away last year. 64 years.

That's an incredibly long time in the life of any pan I'd say.  My parents would have celebrated their 66th wedding anniversary this year.  That makes me sad to think about. 


They got divorced when I was in my 30's, but remained good friends for the rest of my mother's life. Admittedly it was a bit touch and go at the start, but once the dust all settled things were good.  That was the greatest gift my parents could have ever given us. It enabled us to be able to love our parents equally without having to feel like we needed to divide our loyalties. Not everyone is so blessed.


My father still calls the house when he knows my sister isn't there, just so he can hear the telephone message that my mother recorded a while back.  He loves to hear her voice. He says he always leaves a message. He misses her.  The greatest gift a father can give his children is to love their mother. I know my father loved my mother.  He was just not the saying marryied kind of man.


Anyways, pancakes! When my own children were growing up, I made pancakes on Shrove Tuesday for supper of course, and thenm anytime they had a friend stay over or on special occasions (like Birthdays) I would make them for breakfast.


My oldest son makes them for his boys every Saturday morning.  They are a tradition.  And I think a very tasty one. 


If I had had a recipe as simple as this sheet pan pancake I think I might have made pancakes even more often, although I would have had to double the with my crew!  My two oldest boys would have gobbled this up all by themselves!


You can of course just bake it plain  . . .  but then again, why not make things a little bit more special with just a few additions . . .


I totally adore lemon curd and blueberries.  It seemed only natural to combine the two in this fabulously tasty pancake!


Each quarter of the pancake was drizzled with some lemon curd and then topped with a few blueberries prior to baking in a very hot oven.  After only 15 minutes bake time it is ready to serve . . .


Cut into quarters and served hot with a few extra berries and a drizzle of your favourite pancake syrup. In our case, pure maple syrup  . . .


I did dust them with some icing sugar to brighten them up a bit for the camera, but its not necessary if you are just making them for your family.


I think if mom could have made pancakes as easy as these we might have been treated to them a lot more often!

Blueberry & Lemon Sheet Pan Pancake

This delicious pancake bakes in the oven. It bakes in 15 minutes and is hands free rather than standing over the stove cooking individual pancakes, leaving you to get on with other things. Simply cut into four squares when done.  Serve with additional berries and your favourite pancake syrup.

Ingredients:

  • 175g plain flour (1 cup + 4 1/2 TBS)
  • 2 TBS sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 large free range egg
  • 240ml buttermilk (1 cup)
  • 2 TBS butter melted
  • 4 TBS lemon curd, thinned with a bit of lemon juice
  • 20 blueberries, plus more to serve
  • your favourite pancake syrup to serve

Instructions:

  1. Preheat the oven to 230*C/450*F/ gas mark 7.  Line a small rimmed baking sheet with foil, leaving an overhang to lift it out and then spray it generously with some canola oil spray. (Mine is 10 inches square)
  2. Whisk the flour, soda, baking powder, sugar and salt together in a bowl.  Whisk together the egg, buttermilk and melted butter.  Add all at once to the flour mixture and stir together just to combine.  Pour onto the prepared baking sheet and spread it out evenly.
  3.  Whisk your lemon curd and a bit of lemon juice together until it is thin enough to drizzle comfortably. (Depending on your lemon curd, you may not need any.)  Dividing the pancake into quarters, drizzle some of the lemon curd decoratively into each quarter.  Place five blueberries into each quarter, spacing them out evenly.
  4. Bake in the preheated oven for 14 to 16 minutes, until golden brown and the edges have started to pull away from the side of the pan.  Remove from the oven.  Lift out onto a cutting board and cut into squares to serve.
  5. Serve hot with some additional berries and your favourite pancake syrup to drizzle over top.

I love the mix of just a few cooked berries and the some fresh berries scattered over top when you go to eat them.  The lemon curd isn't overpowering, but adds  a subtle touch of sweet moreish lemon. In all truth these are excellent even without any syrup.  Truth.

Maple & Caramel Sauced Blueberry Cornmeal Pancakes


I couldn't wait to share this delicious dessert recipe with you today. It is just fantastic and so simple.  It makes an excellent dessert for when you are entertaining and I have to say most people are delighted when they see you coming with a plate of pancake for them as dessert!  The sauce is to die for! 



Of course this is blueberry season now.  Our berries are ripening on our bushes at the moment and we are enjoying them!


These pancakes are really light and fluffy.  Try not to over mix the batter.  The secret to their fluffiness is not to mix it anymore than necessary. A gentle hand is the key.


The batter contains a quantity of flour and cornmeal.  You could use fine polenta if you wanted to.  I happen to have cornmeal in my larder.  I buy the Quaker brand from Skyco. 



You will need to separate your eggs for these.  The yolks get mixed into the batter and the whites are beaten just until soft peaks form.  You don't want the egg whites  to be dry. 



I don't think frozen berries will work in these.  I would use fresh if you have them.  You will want enough to sprinkle a few on top of each pancake as you are cooking them, and some to serve with the cooked pancakes when done.



The real star of this show is that sauce  . . . .


It is TO DIE FOR!


Seriously TO DIE FOR!  Okay I know  . . .  I said that twice, but I can't stress that point enough!


This sauce will not only be delicious on these pancakes, but it would also be fabulous on ice cream as well . . . .


Rich and sweet  . . .  highly flavoured with maple . . .  do use the real thing . . . there is no substitute for the real thing . . .


The richness comes from the addition of cream  . . .  yummy  . . . 



Just look at how it gilds and drips off the edges of these little crisp edged fluffy sweet pancakes  . . .


If that isn't enough to encourage you to make these, then I don't know what will! 



I suppose you could make them go even further to feed more people by only serving each person half the number of pancakes and adding a scoop of vanilla ice cream or some whipped cream.  Both would also be delicious!

Blueberry Cornmeal Pancakes with a Maple Caramel Sauce


Yield: serves 4 to 6

Serving pancakes for dessert is unique and people love them.  Especially when they are as delicious as these light and fluffy blueberry cornmeal buttermilk pancakes.  The Maple Caramel sauce is to die for.

ingredients:

  • 105g plain flour (3/4 cup)
  • 80g yellow cornmeal (1/2 cup)
  • 2 TBS granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda (baking soda)
  • 1/2 tsp ground cinnamon
  • pinch fine sea salt
  • 2 large free range eggs, separated
  • 240ml buttermilk (1 cup)
  • 3 TBS melted unsalted butter, plus more to grease the pan
  • 1 tsp vanilla
  • 2 TBS soft light brown sugar
  • 100g  fresh blueberries (1 cup)
For the sauce:
  • 240ml pure maple syrup (1 cup)
  • 1 TBS vanilla extract
  • 2 TBS heavy cream

instructions:

How to cook Blueberry Cornmeal Pancakes with a Maple Caramel Sauce

  1. First make the sauce. Put the maple syrup into a saucepan along with the vanilla.  Bring to the boil, then simmer over low heat until it thickens. Whisk in the cream and set aside.
  2. For the pancakes, measure the cornmeal, flour, baking powder, soda, sugar, cinnamon and salt into a bowl.  Whisk together until well combined.   Whisk together the buttermilk, egg yolks, melted butter and vanilla.  Using an electric whisk, beat the egg whites just until soft peaks form.  Stir the buttermilk mixture into the dry mixture, mixing all together thoroughly.  Fold in the egg whites, just to combine.
  3. Heat a large griddle pan over medium heat until it is hot.  Brush with melted butter. Spoon the pancake mixture onto the hot pan in TBS.  I can make about 5 at a time.  Sprinkle the top with a few berries and some brown sugar.  Cook for several minutes until bubbles appear and the bottoms are golden brown, flip over and cook for one to two minutes on the other side, again until golden brown. Scoop off and keep warm.  Repeat until you have used all the batter up.
  4. Serve the warm pancakes sprinkled with a few more fresh berries and a drizzle of the Maple Caramel Syrup.  Enjoy!
