Moist & Spicy Toffee Apple Cake


If you have been reading my blog for a while now you will know that pretty much once a week, I share a recipe over on the Chef Knives Expert site!  To finish off October I am sharing a Moist & Spicy Toffee Apple Cake recipe!  Yes, I HAVE saved the best for last this month! 



You are going to adore this fabulously tasty cake.  It is a very simple cake to bake and uses very simple ingredients that most of us have in our kitchens most of the time.  Fresh eggs, butter, apples, flour, syrup, brown sugar and flour  . . .  and of course a special blend of warm baking spices.


Along with this fabulous recipe I share my best tips on how to line a round deep cake tin properly and easily with baking paper!  



I also share how to make those very pretty apple crisps that decorate the top of the cake . . .  and a very simple sticky toffee icing that you will want to double, its just so tasty!

Gooey Tear & Share Cheesy Bread


Are you looking for a delicious appetiser or finger food to serve to your family and friends while you are entertaining them?  Be it a special occasion, or a casual occasion,  Gooey Tear & Share Cheesy Bread is sure to fit the bill!  Great for game nights, or more intimate gatherings, it is destined to be something which everyone will enjoy!


Not only does it use just a few simple ingredients, but it also goes together in a flash, with very little effort on your part, leaving you with plenty of time  left to enjoy with your guests and family, watching the game and socialising,  rather than being tied to the kitchen!



It involves carving a bowl out of a crusty loaf of bread  which you fill with a delectable mix of cheeses. The rest of the loaf is cross-hatched into fingers, that are brushed with a delicious garlicky oil before the whole lot goes into the oven and bakes, until that cheese is gooey oozy and fabulously ready for dipping with those crisp and flavourful fingers of bread!

Family Favourite Salad Bar Subs


I have another recipe posted on Chef Knive's Expert this week, this time for some really delicious Family Favourite Salad Bar Sub Sandwiches!


You are going to love these tasty family friendly sandwiches.  They are nutritious being high in protein and low in fat as well as being a great source of iron and a fabulously tasty way to get in several of your five a day!


Pretty as a picture they have layers of mustard, lettuce, crisp cucumber, ripe tomatoes, and smoky bacon along with a delicious low fat egg salad.  They make for a lovely light supper or a fabulously tasty lunch.

Cheesy Burrito Melts


My latest recipe has just been published on the Chef Knives Expert Site.  This week I am sharing a delicious recipe for Cheesy Burrito Melts!


This fabulously tasty hot sandwich melt uses simple ingredients you probably already have in your kitchen.  Toasty English Muffins, kidney beans, sweet green bell pepper, tomato salsa (you choose how spicy you want it!), some minced spring onion,  a few herbs and spices and rich cheddar cheese!



They go together in a flash. You can have them made and on the table in less than half an hour tops. They make a fabulously nutritious lunch which is a great source of protein (something we are all trying to get into our diets these days!)  as well as being high in fibre,  iron and calcium!


They are great for game nights when you are enjoying the latest match with your family, or for students who are up studying and need something quick and easy. You can bake them in the oven or in a microwave oven!  They can also be easily assembled ahead of time and refrigerated, ready to pop into the oven 15 minutes or so before you want to eat!  These are quite simply fabulous!  You can find the full recipe and instructions on Chef Knives Expert!

Butternut Squash & Goat's Cheese Lasagne


I have had another delicious recipe published on Chef Knives Expert.  This time it is a fabulously tasty Butternut Squash & Goat's Cheese Lasagne Recipe, which makes a delicious use of the fresh Butternut Squash that becoming available to us at this time of year.  I adore butternut squash. It is one of my favourite of the winter squashes.  Sweet and bright, it just lifts everything it touches! 


A rich bechamel sauce and  three lush cheeses . . .  nutty Gruyere Cheese,  Salty Parmigino Reggiano, and a soft goats' cheese, are layered with a fabulously delicious butternut squash filling . . . 


Pan roasted cubes of butternut squash and onion, mixed with toasted walnuts and a fabulously aromatic and tasty mix of herbs and garlic  . . .


Altogether this is a beautiful supper dish that can be assembled in full a day before you want to serve it and then baked on the day, making it the perfect dish for entertaining.

Apple & Cardamom Custard Tart


My latest recipe is now live on the Chef Knives Expert site.  This time is is a delicious Apple & Cardamom Custard Tart!


Yes, you heard that correct, two of your favourite desserts . . .  Apple Pie and Vanilla Custard rolled together into one deliciously tantalisingly tasty tart! 


It only looks fiddly. In reality it is a very simple make and bake, consisting of a puff pastry base, filled with a lush vanilla and cardamom flavoured custard filling  . . . topped with fresh apple rosettes . . .


and baked until the whole thing is golden brown and just begging you to dig in!


So very impressive.  Be prepared for plenty of oohs and ahhs when you bring this to the table!

Roasted Garlic & Herb Chicken with Melting Potatoes



My latest article is now live on Chef Knives Expert.  You are going to really love this Roasted  Garlic & Herb Chicken with Melting Potatoes Recipe.  Not only does it all cook in one dish but it is fabulously tasty!


A whole free range, corn fed organic chicken, rubbed with butter and stuffed with butter, garlic and herbs is roasted on top of a flavourful bed of potatoes, garlic, stock and white wine  . . .


until the chicken is crisp skinned and succulent and the potatoes are meltingly tender.  So delicious!

Chicken Satay Skewers and Rainbow Salad


I recently created a delicious recipe for the people at Chef Knive's Expert.  This time it was a deliciously different and yet healthy recipe for Chicken Satay Skewers served with a fabulous Rainbow Salad.


Tender pieces of chicken breast meat are marinated in a lush peanut dressing and then loaded onto bamboo skewers along with cubes of pineapple, then popped under the grill until they are a tasty golden brown. 


These are served with a fabulously tasty and crunchy Rainbow salad with red cabbage, two type of sweet bell peppers, sugar snap peas and carrots, all in a tangy & tasty vinaigrette dressing that goes so very well with the chicken skewers!!
